The recipe of shrimp’s croquettes from Ostende.
Ingredients for 20 croquettes
250 g peeled sand shrimps
60 g butter
450 ml milk
150 g flour
6 teaspoon of smocked or lobster bisque
60 g Gruyère
4 eggs
breadcrumbs
10 cl whipping cream
1 lemon
salt / pepper / nutmeg
